Well the blackberries are in full swing, we are utterly loving our walks at the moment as we can snack all the way! I thought we could head out with some containers yesterday and collect enough to make some yummy pudding with. I think the boys managed to eat more than they saved, but fortunately I was more restrained and came back with enough for this delicious Paleo Blackberry Crumble that I had pinned the recipe for last year, and not got around to making!
Ingredients: - 3 cups fresh blackberries - 1 1/2 cups of almond flour (ground almonds) - 1 egg - 2 tbs coconut oil - A drizzle of honey - Cinnamon to taste
Method: Pre heat the oven to around 200. Rinse and drain the blackberries and distribute them in a baking dish - I had the assistance of Tommy and some plastic soldiers, which was very helpful ;) Drizzle over a little honey. Add the egg, coconut oil, almond flour, and cinnamon to a bowl and mix together. The consistency will be quite wet and gooey, not like your traditional butter and flour crumble, but go with it! Distribute the mixture over the blackberries, pop in the oven for half an hour, and hey presto - yummy Paleo blackberry crumble! I served mine with a dollop of clotted cream - absolutely delicious! We're off out blackerrying again soon, to make some more. I even had the leftovers with some yogurt for breakfast :)
